ZUCCHINI LASAGNA

INGREDIENTS
- 3 zucchinis
- 1 teaspoon olive oil
- 1 pound ground beef (90% lean)
- 1/2 cup onion - finely chopped
- 2 teaspoon garlic - chopped
- 24 ounces marinara sauce
- 16 ounces ricotta cheese
- 1/2 teaspoon Italian seasoning
- 1 egg
- 1/2 cup parmesan shredded
- 2 cups mozarella shredded
- 1 tbsp parsley - chopped
- Salt and pepper to taste
- Cooking spray
INSTRUCTIONS
1. In a pot at low heat, add the olive oil, the beef and some salt and pepper, stir until the meat is cooked. Then add the onion and keep stirring for another 3-4 minutes. Add the garlic and let it cook and mix for approx. 30 seconds. And then add the marinara sauce and let it mix with the rest for 5 more minutes
2. In a separate bowl, mix the cheeses, Italian seasoning, egg, salt and pepper. And pre-heat the oven at 190º
4. Cut the zucchini in thin slices, spread olive oil on a deep pan for the oven. And now its time to create our layers!
5. Add the first layer in the deep pan by spreading 1/4 of the beef and sauce in it. Then add the second layer by placing zucchini slices on top of the first layer, until completely covered. Now add the third layer by pouring 1/4 of the cheese sauce on top of the zucchini
6. Repeat the process above until filling up the pan or running our of ingredients. Finally, sprinkle more mozzarella on top
7. Cover the pan and put it in the oven for 30 minutes. Then take the lid off and let the lasagna cook for another 20 minutes
8. Take the pan out of the oven, sprinkle the parsley on top and let it sit for 5-7 minutes. Cut in slices and serve
