Vegan Blueberry Scones

INGREDIENTS
- 1/2 cup coconut oil
- 2 & 1/4 cup flour
- 1/2 cup monkfruit
- 1 teaspoon seasalt
- 2 teaspoons baking powder
- 1/2 cup + 2 tbsp almond milk
- 2 teaspoons vanilla extract
- 3/4 cup fresh blueberries
FILLING INGREDIENTS
- 1/4 cup cashew nuts (soaked for 12 hrs)
- 2 tbsp maple syrup
- 1 teaspoon vanilla extract
- 2 tbsp almond milk
- 3/4 cup fresh blueberries
INSTRUCTIONS
1. Pre-heat the oven at 200ºC. Place baking paper on a tray
2. Mix all the ingredients except the blueberries
3. Once you get a doughy consistency, add the blueberries and combine them with the dough carefully
4. Place the dough on the tray you prepared and create 7-8 triangles with it
5. Put them in the oven for about 15min
6. While they bake, prepare the frosting by blending all the ‘frosting’ ingredients
7. Take the tray out of the oven and with a spoon, pour the frosting on top of each scone and serve
