Carrot Cake Pancakes

INGREDIENTS

- 1 egg

- 1/4 gluten-free oats

- 1/4 cup shredded carrot

- 1 scoop vanilla protein

- 1/4 cup almond milk (no sugar)

- 1 tbsp baking powder

- 2 tbsp monk fruit sweetener

- For frosting: 3 tbsp coconut yogurt, 3 tbsp monkfruit & 1 tbsp maple syrup

INSTRUCTIONS

1. Place all the ingredients in the blender and blend until everything is mixed and smooth

2. Pre-heat the pan on medium heat and add a little bit of coconut oil or ghee

3. Place enough mix on the pan to create a pancake shape

4. Let it cook on one side and when it starts bubbling, flip it to the other side

5. While the’re cooking, make the frosting by mixing the yogurt, monk fruit and maple syrup

6. When it’s all cooked, place your pancakes on a plate and add the frosting
